7 Easy Summer Poolside Cocktails

Happy weekend everyone! Today, I decided to share this quick post on one of my favorite refreshing poolside drinks, a Frozen Mango Daiquiris. Additionally, I am including 6 more fantastic summer poolside cocktails. They are all SUPER EASY and FAST to make!

1- Frozen Mango Daiquiris

Ingredients

  • 1 cup chopped frozen mango
  • 2 ounces white rum
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • pinch salt
  • fresh strawberry or mango slice, for garnishing

How to Make it!

In blender, puree frozen mango with rum, lime juice, honey, and salt. Serve in juice glass garnished with strawberry or mango slice.

2- White or Red Sangria

Ingredients

  • 2 apples, diced into chunks
  • 1 orange, rind removed and diced into chunks
  • 2 tablespoons lemon juice (about 1 lemon, juiced)
  • 1 750ml standard bottle medium-bodied red Spanish wine, like Garnacha or Tempranillo
  • 1/4 cup brandy
  • 1/2 cup orange juice
  • sparkling water, to serve *optional*

 How to Make it!

  • Place all the ingredients, except the sparkling water, in a large pitcher and stir to combine. 
  • Refrigerate sangria for 3 to 4 hours, up to overnight, before serving.
  • When ready to serve, give the sangria one last stir and pour over a glass of ice. Top with sparkling water for some bubbles if desired.

3- Pineapple Coladas

Ingredients

  • 2 pineapples, tops sliced off
  • 4 oz. light rum
  • 1 oz. dark rum
  • 4 oz. coconut cream
  • Splash of pineapple juice
  • Splash of coconut milk
  • Ice

How to Make it!

  • Using a pineapple corer, remove top 3/4 of inside pineapples. (Be careful not to pierce through bottom of pineapple—your drinks will leak!) Use a knife to carefully remove remaining core; discard.
  • Chop one cored pineapple into large chunks and add to a blender with light and dark rums, coconut cream, pineapple juice, and coconut milk. (Reserve second cored pineapple for later use.) Fill blender with ice and blend until slushy.
  • Pour drinks into cored pineapples and top with a paper umbrella.

4- Spicy Cucumber Mint Margarita

Ingredients

  • 4 ounces white tequila
  • 1 ounce Grand Marnier
  • 2 ounces fresh cucumber juice
  • 1/2 ounce jalapeno juice
  • 1 lime
  • 20 mint leaves

How to Make it!

  • Cut the lime into 4 wedges and place in the bottom of a cocktail shaker with the mint leaves. Muddle the lime and mint together until fragrant.
  • To create the cucumber and jalapeno juice, use a juicer. You can also use a blender and then strain the pulp. One other option is to muddle jalapeno slices with the mint and lime.
  • Add ice and the remaining ingredients and shake until combined and cold.
  • If you’d like a salted rim, line a small plate with chili spice and salt. Wet the rims of your glasses and run the rim around the salted plate.

5- Watermelon Mint Mojito

Ingredients

  • 4 fresh mint leaves
  • 3/4 ounce fresh lime juice
  • 3/4 ounce simple syrup*
  • 2 ounces light rum
  • 3 ounces watermelon puree, strained**
  • Club soda, to taste
  • Mint sprigs and small watermelon wedges for garnish (optional)

How to Make it!

  • In the bottom of a Collins or other tall glass, use a muddler or the back of a wooden spoon to muddle mint leaves, lime juice and simple syrup.
  • Fill glass two-thirds with ice. Add rum and watermelon puree.
  • Top with club soda to fill glass; stir well.
  • Garnish with a sprig of mint or small wedge of watermelon, if desired.

6- Vodka Strawberry Lemonade

Ingredients

  • 1 lb strawberries, tops removed and hulled
  • 3/4 cup lemon juice
  • 2/3 cup sugar
  • 1 cup vodka
  • 3 cups water

How to make it!

  • Run the strawberries through a juicer and pour the fresh strawberry juice into a large pitcher filled halfway with ice. If you do not have a juicer, puree the strawberries in a blender or food processor.
  • Strain into a large pitcher filled halfway with ice.
  • Add lemon juice, sugar, vodka and water to the large pitcher with strawberry juice. Stir to combine until the sugar has dissolved. Serve cold.

7- Grapefruit-Ginger Bourbon Sour

Ingredients

  • 1 cup superfine sugar
  • 1 (3-inch) piece fresh ginger, peeled and thinly sliced
  • 1 ¾ cups fresh grapefruit juice (about 2 grapefruit)
  • ½ cup fresh lime juice (about 3 large)
  • 2 cups bourbon

How to Make it!

  • Step 1: Stir together 1 cup water, sugar, and ginger in a 2-cup glass measuring cup. Microwave at HIGH 3 minutes or until boiling. Stir until sugar dissolves; let cool completely (about 1 hour).
  • Step 2: Remove and discard ginger from syurp. Stir together syrup and juices.
  • Step 3: Fill 6 double old-fashioned glasses with crushed ice. Add 1/2 cup juice mixture and 1/3 cup bourbon to each glass; stir. Serve immediately.
